Shepherd's Pie - with Cauliflower Topping


You will need:
1 head of cauliflower
1 block of cream cheese
1/2 c. melted butter
ground beef
1 can of green beans
frozen corn
You can also add zucchini
Ketchup
BBQ sauce

Directions: Bottom layer is really to your liking. Brown the ground beef and add veggies of choice.  Mix in ketchup and BBQ sauce to liking.
Top layer: While browning beef steam cauliflower in the microwave.  Once soft chop in the blender or food processor.  Add 1/2 c melted butter and slowly stir in cream cheese until thickens slightly.

Layer in corningware or casserole dish and back at 350 for 15-20 min.

Bowler Nachos


These are named after the friends who taught us the recipe.

What you will need:
1 Pork Roast
1 Jar of favorite salsa (Picante preferred)
1 cup of brown sugar
Toppings: Frozen corn, black beans, shredded cheese, and Ranch.

Directions:
In a crock pot cook the roast with salsa and brown sugar.  Cook until little blue tab pops up.  Take roast out and shred.  The pork may not shred much. Place back in the crock pot (should take a total of about 4-5 to hours to shred nicely).  Serve over chips and allow everyone to top the way they want to.  *The ranch does seal the deal on these nachos.

Adding to the Family

In the past year Mr. H and I have moved to Colorado, changed jobs, and became home owners.  We've been extremely blessed and I keep thinking one day we're going to slip - there has to be a trial coming! Deciding to add 2 new additions to our family might have been a self made slip! You read correctly, 2!

Two weeks ago we brought home an 18 week old chocolate lab.  Oh, did you think I was having twins? Nope.


His name is Angus and he is a ball of fun...most of the time.  He has his quarks like sleeping under the bed (and getting stuck), only playing fetch with a white tennis ball, eating wood, and doing what ever he can to sleep on our memory foam bathroom mat.  We love him and he has taught us a lot in 2 weeks.  I've learned that I need to work on the level of my voice and that Mr. H can disapline effectively.

We have been blessed again by finding out we are having a boy!  Of course we would have been happy to have a girl but we did hope for a boy so our kids will have a big brother.  Plus, it is so much easier thinking of boy names.  We had our first boy name picked out since our honeymoon (ok I admit we picked out all of our kid's names then).  Driving through Austin we discussed, for the first time, ideas for baby names.  We both like using family names and Mr. H has his grandfather's name so of course the middle name would be Lee like Mr. H.  During this conversation Mr. H asked, "What do you think of the name Brodie?"  I loved it, but of course I knew we had just past Brodie Lane!  Yes, our son will be named after a road!

Recipes - Homemade Mac and Cheese



Homemade Mac and Cheese (Used Pioneer Woman Recipe)

Need:
2 cups uncooked elbow pasta
1/8 cup flour
3 spoonfuls of butter (tablespoon)
2 cups shredded cheddar cheese
2 Tbs mustard
1 cup milk
1 egg

Directions:
Cook elbow pasta el dente. Pre heat oven to 350. In sauce pan melt butter on medium-low heat.  Slowly whisk in flour and mix on medium-low heat for 5 minutes.  Pour in milk and whisk for an additional 5 minutes.  Sauce should thicken. Whisk egg in separate bowl and use 1/4 cup of mixture to beat into egg (careful to not let it cook the egg).  Pour egg mixture into sauce and add cheese to melt. Add mustard. Add salt, pepper, and season salt to taste.  Mix together cheese sauce and pasta and put in a casserole dish, sprinkle a little cheese on top (bread crumbs would be good too) and bake for 18-20 minutes.

Recipes - BBQ Chicken Salad


BBQ Chicken Salad

Need:
2 chicken breasts
romain lettuce
Cucumbers
frozen corn
black beans
BBQ sauce
Ranch

Directions:
Cube and cook chicken.  While cooking cut up lettuce and cucumbers for salad.  On a plate layer lettuce, cucumbers, corn, and black beans.  Set aside half of the cooked chicken for another meal.  Coat left over chicken with BBQ sauce.  Top salad with chicken and drizzle on BBQ sauce and ranch.
